Ingredients
  

  • 2 bananas
  • 2 eggs
  • cup rolled oats
  • ¼ cup maple syrup
  • ½ cup Greek yogurt (plain)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • ½ tsp baking soda
  • ¼ tsp salt

Method
 

  1. Preheat oven to 350°F Line a muffin tin with liners or grease it lightly.
  2. In a large bowl, mash the bananas until smooth.
  3. Add eggs, maple syrup, Greek yogurt, and vanilla extract. Mix well.
  4. Stir in oats, baking powder, baking soda, cinnamon, and salt. Combine until evenly mixed.
  5. Spoon the batter into the muffin cups, filling them about 3/4 full.
  6. Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
  7. Let them cool in the pan for a few minutes before transferring to a wire rack.
