- Prepare the Ingredients: Wash and dice 6 potatoes into small, evenly sized cubes (about ½ inch).. Dice 2 bell peppers (any color) into bite-sized pieces.
- Preheat the Skillet: Heat 2 tablespoons of avocado oil in a large skillet over medium heat.
- Cook the Potatoes: Add the diced potatoes to the skillet and spread them out evenly in a single layer. Cook for 8–10 minutes, stirring occasionally, until the potatoes start to brown and soften.
- Add the Peppers and Seasonings: Stir in the diced bell peppers. Sprinkle garlic powder, black pepper, and sea salt over the potatoes and peppers.
- Cook Until Crispy: Continue cooking for an additional 8–10 minutes, stirring occasionally, until the potatoes are crispy on the outside and tender inside, and the peppers are softened.
- Serve and Enjoy: Remove from heat and serve immediately.
