Ingredients
  

  • 3 sweet potatoes, diced into cubes
  • 1 lb ground beef
  • 1 cup cherry tomatoes diced
  • 1 cup shredded cheddar cheese
  • 2 tsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • hot and honey sauce (adjust to taste)

Method
 

  1. Roast the sweet potatoes: Preheat oven to 425°F. Toss diced sweet potatoes with a drizzle of avocado oil, salt, pepper, and half the garlic powder. Spread evenly on a sheet pan and roast 20–25 minutes, flipping halfway, until golden and tender.
  2. Cook the beef: In a skillet over medium heat, cook ground beef until browned and fully cooked, about 7–8 minutes. Season with the remaining garlic powder, salt, and pepper. Drain excess grease if needed.
  3. Assemble bowls: Divide roasted sweet potatoes among bowls as the base. Top with cooked ground beef, fresh tomatoes, and shredded cheddar cheese.
  4. Finish with flavor: Drizzle hot and honey sauce over the top. Add extra cheese or sauce to taste.
