Chocolate Chip Scones

These easy chocolate chip scones use pancake mix for a shortcut base and come together fast with pantry staples. Soft inside, lightly crisp outside, and perfect with coffee.

Ingredients
  

  • 2 cups pancake mix
  • ½ cup sugar
  • cup cold butter, cubed
  • ½ cup milk
  • 1 tbsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ cup chocolate chips

Method
 

  1. Heat oven to 400°F. Line a baking sheet with parchment.
  2. In a bowl, mix pancake mix, sugar, and cinnamon.
  3. Cut in the cold butter until the mixture looks crumbly with small chunks.
  4. Stir in chocolate chips.
  5. Mix milk and vanilla together, then add to the bowl. Stir just until a soft dough forms. Add a splash more milk if it feels dry.
  6. Turn dough onto a lightly floured surface and gently press into a 1 inch thick circle.
  7. Cut into 8 wedges and place on the baking sheet.
  8. Bake 14 to 16 minutes, until lightly golden.
  9. Let cool slightly before serving.
