Method
- Heat oven to 400°F. Line a baking sheet with parchment.
- In a bowl, mix pancake mix, sugar, and cinnamon.
- Cut in the cold butter until the mixture looks crumbly with small chunks.
- Stir in chocolate chips.
- Mix milk and vanilla together, then add to the bowl. Stir just until a soft dough forms. Add a splash more milk if it feels dry.
- Turn dough onto a lightly floured surface and gently press into a 1 inch thick circle.
- Cut into 8 wedges and place on the baking sheet.
- Bake 14 to 16 minutes, until lightly golden.
- Let cool slightly before serving.
