Ingredients
  

For the Muffins:
  • ¾ cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • tsp salt
  • ¼ cup unsalted butter, melted
  • ¼ cup butter milk  (or milk + ½ tsp lemon juice as a substitute)
  • 1 egg
  • ½ tsp vanilla extract
For the Streusel Topping:
  • ¼ cup all-purpose flour
  • 2 tbsp brown sugar
  • ½ tsp ground cinnamon
  • 2 tbsp unsalted butter, cold and cubed

Method
 

  1. Preheat the Oven: Preheat your oven to 375°F. Line a 6-cup muffin tin with paper liners or lightly grease it.
  2. Make the Streusel Topping: In a small bowl, mix the flour, brown sugar, and cinnamon. Cut in the cold butter with a fork or your fingers until the mixture forms coarse crumbs. Set aside.
Prepare the Muffin Batter:
  1. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix the melted butter, buttermilk, egg, and vanilla extract until combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing.
  4. Assemble the Muffins: Divide the batter evenly among the 6 muffin cups (about ⅔ full). Sprinkle the streusel topping evenly over each muffin.
  5. Bake: Bake for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Cool and Enjoy: Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
