- Preheat the Oven: Preheat your oven to 375°F. Line a 6-cup muffin tin with paper liners or lightly grease it.
- Make the Streusel Topping: In a small bowl, mix the flour, brown sugar, and cinnamon. Cut in the cold butter with a fork or your fingers until the mixture forms coarse crumbs. Set aside.
Prepare the Muffin Batter:
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the melted butter, buttermilk, egg, and vanilla extract until combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing.
- Assemble the Muffins: Divide the batter evenly among the 6 muffin cups (about ⅔ full). Sprinkle the streusel topping evenly over each muffin.
- Bake: Bake for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
