Make the burger mixture: In a large bowl, combine ground beef, egg, breadcrumbs, ketchup, hot honey sauce, garlic powder, salt, and black pepper.
Mix gently: Use clean hands or a spoon to mix until just combined. Do not overmix or the burgers can become tough.
Form the patties: Divide the mixture into 4 equal portions. Roll each portion into a loose ball.
Heat the skillet: Place a skillet or griddle over medium-high heat. Let it get hot before adding the beef.
Smash the burgers: Add the beef balls to the hot skillet. Use a spatula to firmly press each one into a thin patty. Parchment paper, optional for smashing
Cook the first side: Cook for 2 to 3 minutes, until the edges are browned and crispy.
Flip and add cheese: Flip each burger, then place a slice of cheddar cheese on top. Cook for another 2 to 3 minutes, or until the beef is cooked through and the cheese is melted.
Toast the rolls: Toast the burger rolls in the skillet for 1 to 2 minutes, if desired.
Assemble the burgers: Place each cheesy smash burger on a roll. Add pickles, ketchup, and an extra drizzle of hot honey sauce.
Serve warm: Serve immediately while the cheese is melted and the edges are crispy.
