Ingredients
  

Lemon Pound Cake
  • 1 cup unsalted butter, softened (2 sticks)
  • 1 cup granulated sugar
  • 4 eggs
  • ¼ cup lemon juice
  • 1 cup all-purpose flour
  • ½ tsp vanilla extract
  • ½ tsp lemon extract (optional)
Vanilla Drizzle
  • ½ cup powdered sugar
  • 1 tsp milk
  • ¼ tsp vanilla extract

Method
 

  1. Preheat oven to 350°F. Grease a loaf pan.
  2. In a bowl, cream butter and sugar until light and fluffy.
  3. Beat in eggs, one at a time.
  4. Mix in lemon juice and vanilla extract (optional lemon extract)
  5. Add flour and stir just until combined.
  6. Pour batter into the pan and bake for 45–50 minutes, or until a toothpick comes out clean.
  7. Let cool completely before adding glaze.
Drizzle Instructions
  1. Whisk together powdered sugar, milk, vanilla, and optional lemon juice until smooth. Drizzle over the cooled cake.
