Ingredients

  • ¾ cup plain nonfat Greek yogurt
  • 1 tbsp lemon juice
  • 1 cup blueberries, fresh or frozen
  • 1 tsp lemon zest
  • 30 grams whey protein powder

Equipment

  • Blender
  • grater or zester
  • spatula

Method

  1. Wash and dry the lemon. Finely grate 1 teaspoon of yellow zest, avoiding the white pith. Squeeze and measure 1 tablespoon of lemon juice, removing seeds.
  2. Rinse and drain fresh blueberries. If using frozen blueberries, follow the package’s preparation directions.
  3. Add Greek yogurt and lemon juice to the blender. Pulse briefly.
  4. Add blueberries, lemon zest, and whey protein powder.
  5. Blend on low, then increase to high for 30 to 60 seconds. Stop and scrape down the sides as needed. Blend until creamy with no dry powder remaining.
  6. If the mixture stalls because the berries are frozen, turn off the blender and allow a few minutes for softening. Blend again and serve immediately.
