Ingredients
  

  • 2 cups elbow macaroni, cooked and cooled
  • ½ cup mayonnaise
  • 1 tbsp honey Dijon mustard
  • ½ cup diced bell peppers (any color)
  • ½ cup shredded carrots
  • ¼ tsp black pepper
  • ¼ tsp salt

Method
 

  1. Cook the macaroni: Boil elbow macaroni according to package instructions. Drain and rinse with cold water to cool.
  2. Make the dressing: In a large bowl, mix mayonnaise, honey Dijon mustard, salt, and black pepper.
  3. Add the veggies: Stir in the diced bell peppers and shredded carrots.
  4. Combine everything: Add the cooled macaroni and mix until well coated.
  5. Chill and serve: Refrigerate for at least 30 minutes before serving to let the flavors meld.
