Ingredients
  

  • ½ cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp pure peppermint extract
  • cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ cup mint chocolate chips
  • ¼ tsp salt

Method
 

  1. Preheat the oven: Set your oven to 350°F (175°C) and grease an 8x8-inch baking pan.
  2. Mix the wet ingredients: In a medium bowl, whisk together the melted butter and sugar until smooth. Add the eggs and peppermint extract, whisking until fully combined.
  3. Add dry ingredients: Sift in the cocoa powder, flour, and salt. Gently fold the mixture together until just combined (do not overmix).
  4. Fold in the chips: Stir in the mint chocolate chips.
  5. Bake: Pour the batter into the prepared pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
