- Heat oil in a large skillet over medium-high heat.
- Add diced onions (and peppers if using). Cook 3 to 4 minutes until soft.
- Add shaved ribeye to the skillet. Season with garlic powder, salt, and pepper.
- Cook 3 to 4 minutes, breaking up the meat as it cooks.
- Divide the meat mixture into sections in the pan and top each portion with cheddar cheese. Let it melt.
- Toast the Italian long rolls if desired.
- Scoop the cheesy steak mixture into each roll and serve hot.
