Potato Salad

Ingredients
  

  • 2 lbs potatoes (Yukon Gold or red potatoes), peeled and diced
  • ½ cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tbsp Spicy mustard
  • 1 tbsp apple cider vinegar (can substitute lemon juice)
  • pinch salt
  • black pepper to taste

Method
 

  1. Boil the potatoes – Place the diced potatoes in a pot of salted water. Bring to a boil and cook for 10-15 minutes until fork-tender. Drain and let cool.
  2. Make the dressing – In a large bowl, mix the mayonnaise, spicy mustard, and apple cider vinegar (or lemon juice). Season with salt and pepper.
  3. Combine ingredients – Add the cooled potatoes to the dressing. Gently toss until well coated.
  4. Chill and serve – Refrigerate for at least 30 minutes to enhance the flavor.
