- Boil the potatoes – Place the diced potatoes in a pot of salted water. Bring to a boil and cook for 10-15 minutes until fork-tender. Drain and let cool.
- Make the dressing – In a large bowl, mix the mayonnaise, spicy mustard, and apple cider vinegar (or lemon juice). Season with salt and pepper.
- Combine ingredients – Add the cooled potatoes to the dressing. Gently toss until well coated.
