Raspberry Chia Pudding

Creamy raspberry chia pudding made with raspberries, Greek yogurt, chia seeds, and protein powder. This no-cook recipe is easy to prepare ahead for breakfast or snacks.

Ingredients
  

  • 1 cup fresh or thawed frozen raspberries
  • 1 cup Greek yogurt
  • 2 scoops protein powder (30 grams)
  • 2 tbs chia seeds

  • 2 small mason jars

Method
 

  1. Reserve a few raspberries for serving, if desired.
  2. Place the remaining raspberries in a medium mixing bowl. Mash the raspberries thoroughly with a fork until juicy and mostly broken down.
  3. Add the Greek yogurt and stir until evenly combined.
  4. Add the protein powder and stir until no dry pockets remain.
  5. Stir in the chia seeds until evenly distributed.
  6. Let the mixture rest for 5 minutes, then stir it again to break up any clumps.
  7. Cover the bowl or divide the mixture between two small jars.
  8. Refrigerate for at least 4 hours or overnight, until thickened.
  9. Stir before serving and top with the reserved raspberries,
