Method
- Preheat oven to 350°F. Grease or line a muffin tin.
- In a bowl, mash bananas and mix in eggs.
- Add maple syrup and vanilla extract and mix.
- Add oat flour and baking powder. Stir until combined.
- Gently fold in raspberries.
- Scoop batter into muffin tin (makes about 10 muffins).
- Bake for 18–20 minutes, or until a toothpick comes out clean.
- Cool before eating. Raspberries will be hot.
