Ingredients
  

  • 2 cups oat flour
  • 2 bananas (mashed)
  • 2 eggs
  • ½ cup raspberries (fresh or frozen)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup

Instructions
 

  • Preheat oven to 350°F. Grease or line a muffin tin.
  • In a bowl, mash bananas and mix in eggs.
  • Add maple syrup and vanilla extract and mix.
  • Add oat flour and baking powder. Stir until combined.
  • Gently fold in raspberries.
  • Scoop batter into muffin tin (makes about 10 muffins).
  • Bake for 18–20 minutes, or until a toothpick comes out clean.
  • Cool before eating. Raspberries will be hot.
