Ingredients
  

  • 4 medium sweet potatoes, washed and halved lengthwise
  • 2 tbsp avocado oil
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp sea salt

Method
 

  1. Preheat the oven: Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Prep the sweet potatoes: Wash and dry the sweet potatoes. Slice each one in half lengthwise.
  3. Season: Place the sweet potato halves on the baking sheet. Brush the cut sides with avocado oil. Sprinkle with garlic powder, black pepper, and sea salt.
  4. Roast cut-side down: Place the sweet potatoes cut-side down on the baking sheet.
  5. Bake: Roast for 30 to 40 minutes, or until the sweet potatoes are soft inside and caramelized on the bottom.
  6. Serve: Flip carefully and serve warm with your favorite protein or toppings.
