Ingredients
  

  • 2 medium potatoes, diced
  • 1 medium sweet potato, diced
  • 1 cup Brussels sprouts, halved
  • 1 bell pepper, sliced
  • 1 bunch asparagus, trimmed
  • 2 tsp avocado oil
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt (optional)

Method
 

  1. Preheat oven to 400°F
  2. In a large bowl, toss potatoes, sweet potatoes, and Brussels sprouts with 1 tbsp avocado oil, garlic powder, black pepper, and salt.
  3. Spread evenly on a sheet pan and bake for 20 minutes.
  4. Add bell peppers and asparagus to the pan, drizzle with remaining 1 tbsp avocado oil, and toss gently.
  5. Return to the oven and roast for another 10 minutes, until vegetables are tender and slightly crispy.
  6. Serve warm and enjoy!
