- Prepare the corn – In a skillet over medium heat, char the corn for 2-3 minutes until slightly browned.
- Mix the sauce – In a small bowl, combine Greek yogurt, mayo (if using), lime juice, chili powder, and garlic powder.
- Assemble the bowl – Add rice as the base, then top with grilled chicken, charred corn, peppers and black beans.
- Drizzle with sauce, sprinkle with cilantro and cheese (optional), and enjoy!
