Ingredients
  

  • 1 cup cooked brown rice
  • 1 grilled chicken breast, diced
  • ½ cup corn
  • ½ cup peppers
  • ½ cup black beans
  • 2 tbsp Greek yogurt
  • 1 tbsp mayo (optional) for thicker sauce
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • Juice of ½ lime

Method
 

  1. Prepare the corn – In a skillet over medium heat, char the corn for 2-3 minutes until slightly browned.
  2. Mix the sauce – In a small bowl, combine Greek yogurt, mayo (if using), lime juice, chili powder, and garlic powder.
  3. Assemble the bowl – Add rice as the base, then top with grilled chicken, charred corn, peppers and black beans.
  4. Drizzle with sauce, sprinkle with cilantro and cheese (optional), and enjoy!
