Ingredients
  

  • 1 sweet potato, peeled and diced into small cubes
  • 2 eggs
  • 1 ripe avocado
  • ¼ cup cooked meat of choice (e.g., bacon, sausage, or ham), diced or crumbled
  • 1 tbsp Avocado Oil
  • 1 tbsp milk
  • ¼ cup shredded cheese
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • pinch salt

Method
 

  1. Cook the Sweet Potatoes: Heat 1 tablespoon of avocado oil n a skillet over medium heat. Add the diced sweet potatoes and season with a pinch of salt, pepper and garlic powder. Cook for 8-10 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized. Remove from the skillet and set aside.
  2. Cook the Meat: In the same skillet, add your choice of meat (if not already cooked) and heat until warmed through or fully cooked. Remove and set aside.
  3. Scramble the Eggs: Crack the eggs into a bowl, whisk with milk, cheese, a pinch of salt and pepper, and pour into the skillet (add a little more oil or butter if needed). Cook over medium-low heat, stirring gently, until the eggs are softly scrambled. Remove from heat.
  4. Assemble the Bowl: In a bowl, layer the cooked sweet potatoes, scrambled eggs, and diced meat. Add the sliced avocado on top. Season with additional salt, pepper, or any optional toppings you like such as ketchup, hot sauce, salsa, or cheese.
  5. Serve and Enjoy: Grab a fork and dig in! This bowl is best enjoyed fresh and warm.
