Apple Cinnamon Waffles

These apple cinnamon waffles are crisp on the outside, fluffy inside, and totally dairy and egg free. Sliced stovetop cinnamon apples in the batter adds natural sweetness and tastes like apple pie. A easy breakfast or brunch recipe that tastes like fall in every bite.

Ingredients
  

For the stovetop apples:
  • 3 apples peeled and sliced (snap dragon, honey crisp or ambrosia work well)
  • 1 tbsp butter
  • 1 tsp ground cinnamon
For the waffles:
  • cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 tbsp vegetable oil
  • ½ tsp nutmeg
  • cups water
  • 1 tsp vanilla extract

Method
 

  1. Cook the apples: Heat a skillet over medium. Add butter, sliced apples, and cinnamon. Stir often and cook 6–8 minutes until the apples soften and get glossy.

  2. Make the waffle batter: In a large bowl, mix flour, baking powder, cinnamon, and nutmeg. Add oil, water, vanilla, and cooked apples. Stir until combined, the batter should be thick but pourable.
  3. Cook the waffles: Preheat your Belgian waffle maker and lightly grease it. Pour in the batter and cook until golden and crisp, about 4–5 minutes.
  4. Serve: Top with additional warm cinnamon apples, maple syrup or just eat them plain.
