- 2 bananas (riper the better)
- 1 cup rolled oats (gluten-free if needed)
- ¼ tsp ground cinnamon
- 2 tbsp chocolate chips (optional, but highly recommended)
Preheat and Prep: Preheat your oven to 350°F and line a baking sheet with parchment paper.
Mix the Dough: In a medium bowl, mash the bananas until smooth. Add the rolled oats and cinnamon, and stir until well combined. If you’re using chocolate chips, fold them in now.
Shape the Cookies: Scoop about 1-2 tablespoons of the mixture onto the prepared baking sheet. Use the back of a spoon or your fingers to gently flatten each cookie into your desired shape.
Bake: Pop the cookies into the oven and bake for 12-15 minutes, or until the edges are golden and the cookies are firm to the touch.
Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or store for later!
