  • 2 bananas (riper the better)
  • 1 cup rolled oats (gluten-free if needed)
  • ¼ tsp ground cinnamon
  • 2 tbsp chocolate chips (optional, but highly recommended)

Method
 

  1. Preheat and Prep: Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the Dough: In a medium bowl, mash the bananas until smooth. Add the rolled oats and cinnamon, and stir until well combined. If you’re using chocolate chips, fold them in now.
  3. Shape the Cookies: Scoop about 1-2 tablespoons of the mixture onto the prepared baking sheet. Use the back of a spoon or your fingers to gently flatten each cookie into your desired shape.
  4. Bake: Pop the cookies into the oven and bake for 12-15 minutes, or until the edges are golden and the cookies are firm to the touch.
  5. Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or store for later!
