Ingredients
  

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 2 cups broccoli florets (fresh or frozen)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp olive oil
  • 1 tbsp honey
  • ½ tsp black pepper
  • ½ tsp garlic powder

Method
 

  1. Heat the Pan: Place a large pan or wok over medium-high heat and add the oil. Let it heat up for about 30 seconds.
  2. Cook the Chicken: Add the chicken strips to the pan in a single layer (work in batches if needed to avoid overcrowding). Cook for 4-5 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Transfer the chicken to a plate and set aside.
  3. Steam the Broccoli: In the same pan, toss in the broccoli florets and add a splash of water (about 2 tablespoons). Cover the pan with a lid and let the broccoli steam for 2 minutes. You’re aiming for tender and crispy broccoli.
  4. Bring It All Together: Remove the lid and add the garlic, soy sauce, black pepper, and honey. Stir everything together, letting the sauce coat the broccoli.
  5. Reunite the Chicken and Broccoli: Return the cooked chicken to the pan and toss everything together. Cook for another 1-2 minutes, allowing the flavors to blend and the chicken to heat through.
  6. Serve and Enjoy: Dish up your stir-fry hot! Serve it over a bed of fluffy rice, nutty quinoa, or enjoy it straight from the pan for a lighter meal. Garnish with sesame seeds or a sprinkle of red pepper flakes if you’re feeling fancy.
