Ingredients
  

  • 2 cups penne pasta, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • ½ tsp garlic powder
  • ¼ tsp black pepper

Method
 

  1. Cook the penne pasta according to package instructions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, and cucumber.
  3. In a small bowl, whisk together olive oil, red wine vinegar, garlic powder and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Serve immediately or refrigerate for 30 minutes to let the flavors blend.
