Ingredients
  

  • 1 lb pork thinly sliced
  • 1 red pepper sliced
  • 1 green pepper sliced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 tbsp avocado oil
  • 1 cup sweet and sour sauce
  • salt & pepper to taste

Method
 

  1. Prep Veggies & Pork: Wash and cut the vegetables. Thinly slice the pork into bite-sized strips.
  2. Cook Pork: Heat avocado oil in a large skillet over medium-high heat. Add pork and season with a pinch of salt and pepper. Stir-fry for about 4–5 minutes until browned and cooked through. Remove and set aside
  3. Cook Vegetables: In the same pan, add a touch more oil if needed. Add broccoli and cauliflower and cook for 2–3 minutes. Add peppers and stir-fry another 2–3 minutes until crisp-tender.
  4. Combine & Sauce: Return the pork to the pan. Pour in the sweet and sour sauce and toss everything to coat. Cook for another 2–3 minutes, until heated through and sauce thickens slightly.
  5. Serve: Serve hot over rice or noodles.
