Ingredients
  

  • 1 sweet potato, peeled and diced into small cubes
  • 2 eggs
  • 1 ripe avocado
  • ¼ cup cooked meat of choice (e.g., bacon, sausage, or ham), diced or crumbled
  • 1 tbsp Avocado Oil
  • 1 tbsp milk
  • ¼ cup shredded cheese

Instructions
 

  • Cook the Sweet Potatoes: Heat 1 tablespoon of avocado oil n a skillet over medium heat. Add the diced sweet potatoes and season with a pinch of salt, pepper and garlic powder. Cook for 8-10 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized. Remove from the skillet and set aside.
  • Cook the Meat: In the same skillet, add your choice of meat (if not already cooked) and heat until warmed through or fully cooked. Remove and set aside.
  • Scramble the Eggs: Crack the eggs into a bowl, whisk with milk, cheese, a pinch of salt and pepper, and pour into the skillet (add a little more oil or butter if needed). Cook over medium-low heat, stirring gently, until the eggs are softly scrambled. Remove from heat.
